KI Springs Road 2006 Cabernet Sauvignon.
This is the first single Cabernet Sauvignon from our Vineyard, matured for over 2 years in older French and American Oak. This has given a full palate with rich chewy tannins and a lovely balance of classic herbaceous Cabernet flavours, chocolate spice and mint .
Several of Melbourne's leading Sommeliers have liked this wine and ordered it.

Deep purple. The aroma is of freshly ground coffee and warm freshly baked fruit cake. It is both fully ripe and concentrated. This intensity follows through on to the palate with the same mocha overtones and long fine grained tannins that are firmly structured.

This wine was made in the traditional style with the cap plunged by hand and then transferred to French and American oak barrels.
It is characterised by dark berry aromas, rich plummy fruit and underlying fresh mint. Lovely, well rounded tannins contribute to a wine of great structure and comlexity.

The Dyson ‘Clarice’ Cabernet Sauvignon shows rich varietal favours with a good depth of fruit on
the palate. Fine grained tannins along with subtle oak characters and balanced acid make this
wine a pleasure to drink.
The subtle varietal cabernet flavours of the wine, are not over-ridden by heavy alcohol flavours but allow a more a subtle fruit/oak/acid combination to emerge.
