KI Springs Road 2006 Cabernet Sauvignon.
This is the first single Cabernet Sauvignon from our Vineyard, matured for over 2 years in older French and American Oak. This has given a full palate with rich chewy tannins and a lovely balance of classic herbaceous Cabernet flavours, chocolate spice and mint .

This wine was made in the traditional style with the cap plunged by hand and then transferred to French and American oak barrels.
It is characterised by dark berry aromas, rich plummy fruit and underlying fresh mint. Lovely, well rounded tannins contribute to a wine of great structure and comlexity.

The 2003 barrel matured Cabernet Sauvignon is a deep red colour. The nose is of lifted black and blueberry fruits complemented by toasted toffee oak. The palate displays rich blood plum and black fruits. Velvety ripe tannins provide great structure and balance. A sweet cedary oak enhances the persistance on the palate. A very soft and well integrated wine.

The 2007 Rosė was produced from Cabernet Sauvignon grapes sourced from block 1b on the Estate. A devastating frost in November of 2006 resulted in an extremely low crop of very flavoursome fruit.
A gentle winemaking approach was used to capture the full flavour of the fruit. The resulting wine is a blush colour, and has a lively palate with cabernet fruit flavours. The wine offers excellent drinking now, and the acidity along with fine tannins give the wine some ageing ability.
